Walnut Banana Bread

Serving size: 4

Ingredients:

  • 2 1/2 cups (half of each oat and coconut flour)

  • 1 teaspoon baking soda

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 4 medium overripe bananas mashed

  • 1 cup crushed whole raw walnuts

  • 3 Tablespoons ground flaxseed mixed with 3 Tablespoons water 3/4 cup applesauce

  • 1/4 cup date sugar

  • 1 tsp vanilla extract

  • 1 cup coconut milk/cream

Equipment:

  • Oven

  • 9x5 bread loaf pan

  • Parchment paper

  • Mixing bowl

Directions:

  1. Preheat oven to 350 degrees.

  2. Line the bread loaf pan with parchment paper.

  3. Take a mixing bowl and mix 3 tbsp of ground flaxseed and 3 tbsp of water and let it sit for minimum of 5 minutes.

  4. Mix dry ingredients together (flour, baking soda, baking powder, and salt)

  5. Mix and mash the wet ingredients together (bananas, walnuts, applesauce, sugar, vanilla extract, coconut cream, flaxseed mix)

  6. Slowly mix dry and wet ingredients thoroughly together.

  7. Add the new mix to the pan and immediately place in oven.

  8. Bake for 70 minutes and making sure a toothpick is easily able to come out clean.

  9. Let sit and enjoy!
