Midnight Pecan Brownies

Serving size: 12, 1-inch squares

Ingredients:

  • 1 1/2 cups soaked black beans (or canned) 1/2 cup rolled oats

  • 1/4 teaspoon sea salt

  • 1/4 cup molasses

  • 1/4 cup applesauce

  • 2 teaspoons vanilla extract

  • 2 tablespoons dark 100% cocoa powder 1/2 teaspoon baking powder

  • 1/2 cup dark chocolate chucks

  • 1/2 cup whole crushed pecans

  • Coconut or avocado oil for greasing

Equipment:

  • 12 x 12” Baking dish

  • Parchment paper

  • Food processor

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Cover the entire pan with parchment

    paper and grease the bottom of the pan with chosen oil.

  2. In a food processor, add the beans, cocoa powder, oats, sea salt, molasses, applesauce and vanilla extract and process for 8 minutes or until smooth.

  3. Transfer mixture to a bowl and fold in the baking powder and chocolate chunks and pecans.

  4. Press batter evenly into pan, and bake for ~ 20 minutes, or until slightly firm to the touch.

  5. Let it cool and cut into squares. Enjoy!
